This is one of mine and Brett's favorite recipes! It's such a nice change from spaghetti. I got it off of allrecipes and then made a few minor changes. We like it a little spicy, but if you don't, you can go with a mild sausage. I love recipes that call for wine too....so I can have a glass while I cook. I wouldn't want to waste it!!! Enjoy!
INGREDIENTS
1 (12 ounce) package dry penne pasta
2 teaspoons olive oil
1 pound hot Italian sausage
1 cup chopped onion

1/2 cup wine (red or white...I use whatever I'm drinking at the time)
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes with garlic
1 (6 ounce) can tomato paste
2 cups shredded mozzarella cheese
1/4 teaspoon basil

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until almost brown. Add mushrooms. Once meat is browned, drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes , tomato paste, and seasonings. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch greased baking dish. Mix in 1 cup of the mozzarella then sprinkle the rest on top. Bake in preheated oven for 20 minutes, or until cheese is melted.

I still hate running though......that doesn't seem to be changing.





Saturday consisted of sausage bread from Jody's for breakfast (mmmmmm), a little shopping, a little 'craftiness', and a surprise trip to NOLA to the melting pot for dinner!!!! We had the whole shabang... cheese fondue, lobster, filet mignon, and the yin yang chocolate for dessert. Delish!!!!
